Olive Varieties

Aceituna Arbequina:

A small olive with a mild, fruity flavor, ideal for those who prefer delicate and slightly sweet oils. Perfect for salads and light dishes.

Aceituna Perdigón:

An indigenous variety from our region, the Perdigón olive is medium-sized and its name recalls the chick of the red partridge, a bird common in our area. Its oil has an intense flavor, balanced between bitterness and spiciness, perfect for stews and meats.

Aceituna Hojiblanca:

An olive with a fruity taste and a touch of bitterness and spiciness. Versatile, perfect for salads, bread, and traditional Andalusian dishes.

Tradition, Sustainability, and Passion

At Cortijo Los Villalones, the family tradition of olive oil production is at the heart of our work. Over three generations, we have cared for each of our olive trees with dedication and respect, keeping the essence of our land alive in every drop of oil. With the recent expansion of our project, we have acquired new estates, increasing our production and incorporating organic farming on additional hectares. This move strengthens our commitment to sustainability and respect for the environment, using agricultural practices that protect and enrich the soil, water, and surrounding nature.

Fieldwork: Purity and Quality in Every Drop

The fieldwork at Cortijo Los Villalones involves everything from the manual harvesting of olives to the oil extraction, with great care to ensure its purity and quality. Thanks to organic farming, we avoid the use of pesticides and chemicals, promoting a natural environment that results in authentic oils with fruity aromas and a perfect balance of bitterness and spiciness.
